Under normal conditions, I like easy recipes. When I only have a couple hours between finishing a half marathon and arriving at a baby shower to which I’ve promised to bring baked goods, I really like easy recipes. This one fit the bill for yesterday’s craziness.

3 brown bananas, mashed
2 cups gluten-free oats
½ cup chopped dates (without pits)
½ cup chocolate chips
1. Preheat oven to 350° and grease a 9-inch springform pan (or a 9” x 9” pan).
2. Combine all ingredients in a large bowl and mix well.
3. Press mixture into pan.
4. Bake for 30 minutes.
5. Cool and then cut into bars.

I'm really impressed you baked between your race and the shower. And where do you get gluten free oats? I was looking for them but couldn't find them.
ReplyDeleteI just stumbled onto your blog (from a triathlete's blog--can't remember which one). Your recipes look awesome, so I made the pesto lasagne and the key lime "ice cream" sandwiches tonight. Wow! They are really, really good! Tomorrow--the oatmeal chocolate chip bars! (Oh, by the way, you didn't say how many servings the key lime sandwiches made...I'd say, um, one!) I will be back here a LOT!
